Amaranth takes its name from a cherry red flower, whose vivid colour and long-lasting life have made it a symbol of enduring beauty. Aesop wrote a fable entitled ‘The Rose and the Amaranth’ in which the amaranth envies the rose’s beauty and sweet scent. “Ah, my dear friend, I bloom but for a time”, replies the rose. “My petals soon wither and fall, and then I die. But your flowers never fade, even if they are cut; for they are everlasting."
